Eggs

Parsley
Green bell pepper
1 tbsp vinegar
Lemon
Onion
shallots
Clove

Direction
Add in water to boil on medium high in pot, clove, parsley and vinegar. When your water has reach it’s boiling point, break eggs and drop inside boiling water. Cook 5 minutes. Remove eggs with a slotted spoon (spoon with holes) and run under cold water for a few seconds and put aside. Prepare French gravy (sauce san vian) by adding the remaining ingredients and adding onion when you turn off the stove. Arrange poached eggs on a plate and place gravy right on top of it. Enjoy!

Tofu can be used as a substitute for eggs. You will need to marinade the tofu as you do for meat. Instead of adding one tablespoon of vinegar, add 2 tablespoons of vinegar and follow same directions as above.
